Stephane Damezin
General Manager
Stéphane began his career in Scotland, having moved from his native France. Following a role as General Restaurant Manager at The Honours Brasserie by Martin Wishart in Edinburgh, Stéphane joined the Roux at Skindles team, bringing a wealth of experience in restaurant and front of house management. Stéphane combines a love of food and wine with complete customer focus and his enthusiasm and attention to detail are appreciated as much by our guests as his team.
Alain Roux
Chef Patron
Alain opened Roux at Skindles with his late Father, Michel Roux O.B.E. in November 2018.
He began his career with an apprenticeship in pastry and spent seven years training in some of France’s most notable kitchens including Restaurant Pic in Valence and La Côte St Jacques. In 1992, Alain joined our sister restaurant, The Waterside Inn in Bray, and having worked through the ranks, took over from his father to become Chef Patron in 2002. He leads The Waterside Inn to this day – only the third restaurant in the world to achieve 41 consecutive years of Three Michelin Stars. Alain also created the thriving Alain Roux Culinary School offering fun and immersive classes to all levels of ability.
